Odlums Almond Shortbread

Ingredients:

  • 75g/3oz Odlums Cream Plain Flour
  • 25g/1oz Odlums Cornflour
  • 50g/2oz Shamrock Ground Almonds
  • 125g/4oz Butter (softened)
  • 50g/2oz Shamrock Golden Caster Sugar

Method:

  1. Preheat oven to 160°C/325°F/gas mark 3. Beat butter and sugar together until smooth. A wooden spoon or electric mixer may be used!
  2. Add the flour, cornflour and ground almonds. Mix gently until a dough is formed.
  3. Use your finger tips to form dough into a ball and lightly knead, if necessary.
  4. Press dough into a greased n8”/20cm round. A sandwich tin may be used.
  5. Prick around top of dough with a fork.
  6. Bake for 20 minutes or until very pale in colour.
  7. Allow to set in tin for 5 minutes, then transfer to a wire rack to cool. Slice or cut into shapes.
  8. As soon as shortbread is cold, store in an airtight tin.

 

For biscuits, roll out mixture on a floured surface and cut out shapes or rounds using biscuit cutters.

For fingers, press dough into a 7”/18cm square tin and cut into fingers after baking.

Odlums Coconut Buns for baking with kids

What you need:

  • 225g/8oz Odlums Cream Plain Flour
  • Pinch of Salt
  • 1 teaspoon Odlums Baking Powder
  • 75g/3oz Butter or Margarine
  • 75g/3oz Shamrock Golden Caster Sugar
  • 50g/2oz Shamrock Desiccated Coconut
  • 1 Egg, beaten
  • 150ml/¼pt Milk

To Decorate

  • Fruitfield Raspberry Jam
  • Extra Shamrock Desiccated Coconut

How to:

  1. Preheat oven to 200°C/400°F/Gas 6. Lightly grease 2 flat baking trays.
  2. Sieve the flour, salt and baking powder into a bowl.
  3. Rub in the butter or margarine until mixture resembles breadcrumbs.
  4. Add the sugar and coconut and mix well.
  5. Mix to a fairly stiff consistency with the egg and milk. Drop dessertspoonfuls of the mixture, spaced apart on the prepared tins. Makes about 12.
  6. Bake for 15-20 minutes until risen and golden brown. Remove from oven and transfer buns to wire tray to cool.
  7. Brush the top with jam and dip in the extra coconut.

What you need:

  • 225g/8oz Odlums Cream Plain Flour (sieved)
  • 175g/6oz Butter or Margarine
  • 225g/8oz Shamrock Dark Muscovado Sugar
  • 350g packet Shamrock Sultanas
  • 350g packet Shamrock Fruit Mix
  • 100g tub Shamrock Cherries
  • 100g packet Shamrock Chopped Almonds
  • 100g packet Shamrock Ground Almonds
  • 3 large Eggs
  • Rind and Juice of 1 Orange
  • 1 teaspoon Goodall’s Mixed Spice
  • 2 baby bottles of Brandy

How to:

  1. Put butter/margarine, sugar, fruit, rind, juice and one baby bottle of the brandy into a large saucepan.
  2. Slowly bring to the boil, stirring occasionally, until the butter/margarine has melted.
  3. Turn off heat and leave to cool for approx 30 minutes.
  4. Meanwhile pre-heat oven to 140°C/275°F/Gas 1 and line an 8″/20cm round deep cake tin with greaseproof paper.
  5. Stir the eggs, nuts and ground almonds into the fruit mixture and mix well.
  6. Finally, stir in the sieved flour and mixed spice.
  7. Spoon the mixture into the tin and smooth it out evenly – the back of a metal spoon dipped in water is handy for this!
  8. Bake for 2½-3 hours approx. After 2 hours, cover with paper if cake is browning too quickly. To check the cake is done, insert a skewer into the centre – if it comes out clean, the cake is cooked.

Odlums Banana Layer Cake

Ingredients

350g /12 oz Odlums Cream plain Flour
1 teaspoons Odlums Bread Soda
Pinch of Salt
125g/4 oz Butter
200 g/7oz Granulated Sugar
2 large eggs
1 teaspoon Goodall’s Vanilla Extract
3 Large Bananas (Mashed)
60ml/ 4 Tablespoons Buttermilk

Fresh Banana Icing Ingredients

1 Large Ripe Banana (Mashed)
450g/1 pound Icing Sugar (Sieved)
50g/2 oz Butter
125g/4 oz Cream Cheese
1 teaspoon Goodall’s Vanilla Extract

Filling

2 bananas (not overly ripe, for slicing between the layers)

 Method

1. Preheat oven to 190°C/375°F/Gas 5.
2. Grease and baseline with grease proof paper 2 x 8 “/ 20cm sandwich tins.
3. Beat butter and sugar together until smooth and creamy.
4. Add the eggs and vanilla extract and beat for 30 seconds.
5. Next mix in the banana and buttermilk. Finally, sieve in flour, bread soda and salt.
6. Gentle stir to combine. Divided mixture evenly between two prepared tins.
7. Bake in centre of the oven for 25 minutes, or until well risen and firm to the touch.
8. Remove from the oven, leave in tin for 10 minutes.
9. Turn into a wire tray to cool.

To Assemble Cake

1. Meanwhile make the icing by putting all ingredients into a mixing bowl. Beat until smooth.
2. Spread two thirds of the icing on both halves of the cake.
3. Slice and arrange the bananas on one half of the cake and place the other half on top.
4. Spread remaining icing on top of the cake.

Odlums Traditional Pancakes

Ingredients :

  • 125g / 4oz Odlums Cream Plain Flour
  • Pinch of Salt
  • 1 Egg
  • 300ml / 1/2 pint Milk
  • Oil for frying

Method:

  1. Sieve flour and salt into a bowl.
  2. Make a well in the centre of the flour, break in the egg and add about a third of the milk. Beat well, gradually pouring in the rest of the milk and drawing in the flour to make a smooth batter.
  3. Pour batter into a jug and allow to stand for about 30 minutes.
  4. Brush a pancake pan or frying pan with oil. When the pan is hot, give the batter a stir before pouring a thin layer onto the pan.
  5. Fry until golden brown. Turn and fry the other side until brown also.
  6. Stack pancakes on a large plate, as they are cooked.
  7. Spread with chocolate sauce, roll and add ice cream

To Serve

  • Chocolate Spread
  • Ice cream

Tasty Filling Suggestions

  1. Dust with Shamrock Golden caster sugar, add a squeeze of lemon juice, roll up pancake and serve.
  2. Drizzled with Rowse Honey

Ingredients

Pastry 175g/6oz Odlums Cream Plain Flour Pinch of Salt 75g/3oz Butter/Margarine Cold Water   Topping 75g/3oz Odlums Cream Plain Flour 125g/4oz Butter/Margarine 125g/4oz Caster Sugar 100g packet Shamrock Ground Almonds 2 Eggs 2 teaspoons Goodall’s Almond Extract/Essence 2 tablespoons Fruitfield Raspberry Jam Shamrock Flaked Almonds to decorate

Method:

  1. Preheat oven to 190°C/375°F/Gas 5. Lightly grease an 11 x 7”/ 28x 18cm Swiss Roll tin.
  2. Sieve the flour and salt into a bowl. Rub in the margarine and add sufficient water to make a soft dough.
  3. Turn onto a lightly floured board, roll out and line the Swiss Roll tin. Cover and leave in the fridge while making the topping.

 

To make topping

  1.  Melt the margarine in a pan over a low heat.
  2.  Remove from the heat and add the sugar, ground almonds and strong flour.
  3. Mix well, then beat in the eggs and almond essence. Leave to cool a little.
  4. Remove pastry from the fridge; spread the jam over the top of the pastry base.
  5. Pour the topping over the jam.
  6. Decorate with flaked almonds and bake for 35-40 mins. until pale golden in colour.
  7.  When cool, cut into slices.
